From our grass-fed, slow-grown lambs raised on the Blackdown Hills, these bones carry real depth of flavour. As they simmer, the natural collagen breaks down into gelatine, giving body and silkiness to broths, gravies, and sauces. The marrow adds savoury richness, while the roasted exterior develops a deeper, more complex character.
Roast the bones first for a darker, more intense stock, or simmer gently with onions, carrots, herbs, and peppercorns for a clean, fragrant broth. Use the resulting stock as the base for soups, stews, and risottos, or reduce it to create deeply flavoured gravies and sauces.
