Do You Know Where Your Lamb is Coming From This Easter?

At Beacon Farms, we believe the best food comes from a foundation of care, respect and a deep connection with nature. As Spring arrives, we’d like to highlight something special about our lamb. Unlike many others, we don’t sell ‘Spring lamb’; a term often used for younger lambs aged 3 to 6 months, fed supplements to accelerate growth. At Beacon Farms, we offer only old season lamb, or hogget, and there are several reasons why.

Why Hogget?

Our hogget is 8 to 15 months old at slaughter, giving them ample time to mature naturally. Born the previous Spring, they graze freely on lush pastures of our farm in the Blackdown Hills of Devon, thriving on a natural, grass-based diet. This slower growth process allows our lambs to develop a richer, more complex flavour and a firmer texture; qualities young lambs simply can’t achieve. Every lamb we sell is hand-selected by us from our own farm, ensuring that only the healthiest, highest-quality lamb makes it to your plate. This personal, hands-on approach guarantees the best possible eating experience.

Taste the Difference

Why does this matter? The difference is in the taste. As our lambs are given the time to mature properly, their meat develops a depth of flavour that is both satisfying and tender, with a texture that’s second to none. The result is a truly memorable eating experience that’s simply not possible with younger lamb. Our approach also supports a more sustainable farming system. By allowing the lambs to graze freely, we’re not just enhancing the flavour and welfare of the animals, we’re also nurturing the land and supporting a more traditional farming method that’s better for the environment.

A Careful Process for Perfect Meat

Once they’re ready, our hogget is dry-aged for 7 days, allowing its flavours to fully develop. Then, it's expertly prepared by our family-run butchers just nine miles down the road. Every cut is crafted to the highest standards, ensuring the finest quality for you.
