Butter Roasted Spatchcock Chicken
Serves 4 | Ready in 1 hour
Ludicrously simple with the juiciest results. We stuffed ours into a fresh baguette with green salad and a homemade mayonnaise.
- 1 Spatchcock Chicken
- 150g Butter
- Sea salt aplenty
Preheat your oven to 220C. Place your chicken on a large roasting tray and smother in butter, both sides. Sprinkle generously with salt and pop it in the oven for 40 minutes.
It will come out golden and bubbling, jam packed with flavour. Serve as part of a roast dinner, atop a caesar salad or however else you may wish to enjoy.
