Our Boned & Rolled Saddle of Wild Venison is an impressive roasting joint, expertly prepared by our butchers for even cooking and effortless carving. Taken from the finest part of the deer, the saddle. A boned and rolled saddle is essentially the loins (and part of the rib cage removed) neatly tied into a joint, perfect for roasting.  

This cut is renowned for its exceptional tenderness, fine texture and refined, gently gamey flavour. Carefully boned, trimmed and hand-tied, it delivers both striking presentation, even cooking, easy carving and exceptional quality.

Wild venison is naturally lean, the result of a free-ranging lifestyle and a varied woodland diet of grasses, herbs and forage. This produces meat that is high in protein and rich in essential nutrients such as iron and B vitamins, while remaining lower in fat than traditional red meats.

For best results, bring to room temperature, sear to colour, then roast at 180°C (160°C fan) and serve pink for maximum tenderness. Rest well before carving and pair with seasonal vegetables and a rich red wine or juniper jus for a truly memorable centrepiece.

We recommend a serving of 200g per adult.

We blast freeze our meat because it gives you the highest quality possible.

Meat that is sold as “fresh” in supermarkets or online has often spent days travelling through supply chains or sitting in chillers before it reaches you.
