MEET THE FARMERS

For six generations, spanning more than 80 years, the Slade family have been raising Bronze turkeys at Rosamond Farm in Devon.

Their turkeys are reared free range, with access to open pasture where they can roam, forage for grass and insects, and express their natural behaviours. They also have access to barns for shelter from the elements and protection when needed.

The birds arrive at the farm as day old chicks and are raised on a natural diet that includes locally sourced wheat and vegetables, alongside the grass and insects they forage themselves. Without growth promoters, artificial additives or routine antibiotics, the Slades allow their heritage breed turkeys the time to grow naturally.

It is a traditional approach that takes time and care, but the difference is evident in the finished bird. Each turkey is game hung and dry plucked by hand, before being prepared for your Christmas table. The result is beautifully textured meat with a deep, distinctive flavour.

In Sherborne, Angelo raises his geese among traditional cider orchards, where the birds have plenty of space to roam and forage freely.

The geese spend their days grazing on grass and fallen apples beneath the trees, alongside a diet of locally sourced rolled oats. With such an abundance of natural forage and room to roam, they are reared in a way that allows them to express their natural behaviours and develop at their own pace.

The result is a beautifully finished bird, with golden yellow skin and rich, distinctive flavour. Carefully reared in the orchards and selected for our Christmas range, these are geese that have earned a special place at our own Christmas table.

At Redwoods Farm in Devon, Mark Chappell raises chickens using a pasture based system that goes beyond conventional free range. Every day, the birds are moved onto fresh pasture using mobile shelters and electric fencing, giving them access to new ground to roam and forage.

The mobile shelters provide protection from predators, while the fencing allows Mark to manage the birds' access to fresh grass, bugs and insects. Regularly moving the flock helps prevent the pasture from becoming worn and gives the chickens access to fresh ground, sunlight and fresh air.

The chickens are also an important part of Mark's wider regenerative farming system. Following the cattle around the farm, they help spread and incorporate manure into the soil while foraging for insects and worms. This natural relationship between livestock helps cycle nutrients back into the land, supporting soil fertility and the wider farm ecosystem.

Mark raises a traditional breed of chicken that grows much more slowly than the birds typically found in supermarkets, taking more than twice as long to reach maturity. These birds have a different build, with stronger, more developed legs suited to roaming and foraging across the pasture.

Feed and fresh water are available at all times, with the chickens' feed made from locally sourced grains grown within ten miles of the farm. There is no imported soya. Combined with daily access to fresh pasture and a slower growing breed, this creates a system designed around the birds' natural behaviour and development, without the need for routine antibiotics.

The difference is evident in the finished bird. With its golden yellow skin, firm texture and deep, rich flavour, Mark's chicken has a character all of its own.
